To add a little variety to my breakfast routine, which usually consists of delicious smoothie bowls only as you know 🙂 I finally managed to try the “baked oats” trend. Baked oats are like porridge, but baked. The addition of baking powder and psyllium husks creates a really nice dough that almost resembles a small cake. The dough only needs a few ingredients and is very easy and quick to make. Those baked oats are ideal during the week when you don’t have that much time to prepare breakfast. This little dish definitely convinced me and I’ve eaten baked oats a couple of times for breakfast or dessert.
The dough becomes a little summery with poppy seeds and lemon juice. A few fresh berries and some maple syrup give the whole thing the finishing touch.

Baked Oats with Poppy Seeds and Lemon
PrintIngredients
- 1/2 cup rolled oats
- 1/2 ripe banana
- 1/4 cup soy milk (120 ml)
- 1 tsp poppy seeds
- 1 tbsp lemon juice
- 1/2 tsp baking powder
- 1/2 tsp psyllium husks
- Pinch of salt
Instructions
- Mash banana on a little plate.
- Mix mashed banana with the rest of the ingredients until well combined.
- Fill the dough into an ovenproof baking pan and bake at 180ºC for 20-25 minutes.
- Top with fresh berries and some maple syrup and enjoy warm.
