This cauliflower curry is easy to make and very delicious. It’s cooked with chickpeas and beans and a creamy coconut sauce and is super healthy. You can round off the meal with rice or naan bread.

What ingredients do you need to make the cauliflower curry?
- 1 tbsp oil
- 1 onion
- 1 cauliflower
- 1 can of chickpeas
- 250 g green beans
- 2-3 tsp garam masala
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp salt
- 1 can of coconut milk
- 1 can of tomatoes (peeled and chopped)
- Some water
Serve with rice, naan bread, etc.
Top with fresh cilantro or parsley.

How to make the cauliflower curry recipe
- Wash cauliflower and cut it into bite-sized pieces.
- Peel and finely dice the onion and garlic.
- Heat oil in a large pan and sauté onion for 2-3 minutes.
- Add the spices and make stir well.
- Add the cauliflower, mix, and make sure the cauliflower is covered with spices.
- Add chickpeas and green beans.
- Deglaze with coconut milk and tomatoes. Bring to the boil and simmer for about 30 minutes. Stir occasionally. Add some water if there is not enough liquid.
- In the meantime, prepare the rice, naan, or garnish of your choice.
