These coconut bites are super easy to make, sugar-free, vegan and so delicious! While the filling has a nice coconut flavor (but not too intense) and a fluffy texture, the chocolate coating gives sweetness and matches perfectly.
Those coconut bites are one of those perfect cute treasures, you should keep in a little container hidden behind some jars in the back shelf of your fridge. Why hiding the good stuff? The answer is simple: To avoid eating them all straight away and to prevent others to do the same. Seriously, when I prepared them the first time, me and my fiancé couldn’t stop eating and we finished 20 coconut bites within 24 hours. So, you see the risk, right?

Even though I am not a big fan of chocolate coating, I accept the challenge for these little ones. First I used melted vegan chocolate, which was super watery and almost too liquid to actually coat the little bites. But then I put the melted chocolate in the fridge for about 10 min until it got a bit more solid. And well, then I started the beloved coating procedure again. So next time I will keep that in mind – and I am pretty sure that won’t be too far away.
