Easy Vegan Summer Dessert: This chocolate semolina pudding topped with mango puree, granola, and berries is the perfect sweet summer treat on warm summer days.

We could enjoy the first sunny days here in Berlin and I love this season so much. All the fresh berries, the blooming flowers, and green trees and this hope and happiness in the air. 

Inspired by the uplifting and happy mood, I made this easy vegan summer dessert with chocolate semolina pudding and mango puree, topped with homemade granola and fresh strawberries. I love to enjoy this sweet treat for breakfast, as a dessert, or as a snack. It’s a perfect little portion of joy, sun, and happiness.

What Do You Need To Make This Vegan Chocolate Dessert?

Chocolate Semolina Pudding

  • 30 g semolina
  • 250 ml milk (plant-based, for example, soy milk)
  • 30 g of sugar
  • 1 pinch of salt
  • 2 tbsp cacao powder

Mango Puree

  • 1 ripe mango

Topping

  • Granola
  • Strawberries

How To Make This Easy Vegan Summer Dessert

  1. Combine the milk, sugar, and salt in a small saucepan and bring to boil, stirring constantly. Now add the semolina and cacao powder and continue cooking over medium heat. Simmer for up to 5 minutes until the semolina is creamy and thick. Then take the pot off the stove and let cool down.
  2. For the mango puree, peel the mango and blend until you get a creamy, nice puree. 
  3. Fill chocolate semolina pudding in 2-3 glasses, add mango puree, and top with homemade granola and fresh raspberries.
  4. Enjoy 💕
