Simple and delicious gnocchi stir-fry with mushrooms and fresh pesto. This gnocchi dish is super quick to prepare, delicious and healthy!
This gnocchi stir-fry is incredibly delicious and easy to prepare. Crispy fried gnocchi, aromatic mushrooms and fresh, flavorful pesto make the perfect dish. Whether for lunch or dinner – this gnocchi pan always tastes good.
I recommend you to do more of these immediately. The gnocchi can be stored in the fridge for 1-2 days. You can also cook in advance.
For this recipe, I made homemade gnocchi because I simply find them the most delicious. You can also use store-bought gnocchi from the refrigerated section.

Ingredients for the gnocchi dish
- 1 kg of gnocchi
- 800g brown mushrooms
- butter
Pesto
- 1 bunch coriander (or parsley)
- 2 cloves of garlic
- 40 ml olive oil
- 50g pine nuts (roasted) + a few for the topping
- salt and pepper
How to prepare the gnocchi pan with pesto and mushrooms
- Cook gnocchi in salted water according to package directions. Once they float to the surface, skim off and set aside.
- Clean and slice mushrooms.
- For the pesto, wash the coriander thoroughly, peel the garlic and roast the pine nuts. Process all ingredients in a food processor or with a hand blender into a pesto. Taste the pesto well.
- Heat a large pan with some butter. Add the gnocchi and sear on all sides. Add mushrooms and sauté for another 5-10 minutes until nicely golden brown.
- Stir in the pesto and season the gnocchi pan to taste.
- Serve gnocchi with pine nuts and fresh herbs.
