  • zucchini
  • lemon
  • mushrooms
  • chopped tomatoes
  • oil
  • onion
  • clove of garlic
  • Spices
  • fresh Parsley

How to make the pasta dish?

  1. Cook pasta according to package instructions.
  2. Peel and finely dice the onions and garlic. Wash zucchini and cut or slice thinly. Clean and finely dice the mushrooms.
  3. Heat some oil in a large pan. Sauté onions and garlic in it until translucent.
  4. Add mushrooms and sauté over medium-high heat for 6-8 minutes. Season with salt and pepper.
  5. Add the chopped tomatoes and stir in the sugar.
  6. Now fold in the zucchini slices together with the grated lemon zest and simmer gently for 5 minutes.
  7. Season with oregano and stir in finely chopped parsley. Simmer everything together for another 3-4 minutes and season with salt and pepper.
  8. Serve the sauce with your pasta. Vegan Parmesan or rice cheese goes well with this.

Ingredients

  • 250g of pasta
  • 1 onion
  • 1 clove of garlic
  • 1 zucchini
  • 400g brown mushrooms
  • 2 cans of chopped tomatoes
  • 2 tsp sugar
  • Salt pepper
  • 1-2 tsp dried oregano
  • Grated zest of 1 lemon
  • 1 small bunch of parsley

Instructions
