Super delicious lemon zucchini sauce meets pasta. This fresh, delicious pasta recipe is a true summer highlight on your plate.
What ingredients do I need for the pasta with lemon zucchini sauce?
- pasta
- zucchini
- lemon
- mushrooms
- chopped tomatoes
- oil
- onion
- clove of garlic
- Spices
- fresh Parsley

How to make the pasta dish?
- Cook pasta according to package instructions.
- Peel and finely dice the onions and garlic. Wash zucchini and cut or slice thinly. Clean and finely dice the mushrooms.
- Heat some oil in a large pan. Sauté onions and garlic in it until translucent.
- Add mushrooms and sauté over medium-high heat for 6-8 minutes. Season with salt and pepper.
- Add the chopped tomatoes and stir in the sugar.
- Now fold in the zucchini slices together with the grated lemon zest and simmer gently for 5 minutes.
- Season with oregano and stir in finely chopped parsley. Simmer everything together for another 3-4 minutes and season with salt and pepper.
- Serve the sauce with your pasta. Vegan Parmesan or rice cheese goes well with this.

- 1-2 tsp dried oregano
- Grated zest of 1 lemon
- 1 small bunch of parsley
