How to make vegan mie noodles with broccoli & mushrooms

Ingredients:
– 250g mie noodles⁠
– 1 broccoli, chopped⁠
– 400 mushrooms, chopped⁠
– 2 cm fresh ginger, grated⁠
– vegetable oil⁠

Sauce:⁠
– 1/2 cup water⁠
– 1 tbsp brown miso paste⁠
– 1 tbsp lemon juice⁠
– 1 veggie broth cube⁠
– 1 tsp tamarind⁠
– 2 tbsp soy sauce⁠
– 1 tsp tapioca starch⁠
– 1/2 tsp chili flakes⁠
– 1-2 tbsp brown sugar⁠

Method:
1. Cook mie noodles as per instructions. Set aside.⁠
2. In a small bowl, mix together all ingredients for your sauce. ⁠
3. Heat oil in a pan over medium heat. Add ginger and cook for about 1 minute. Add broccoli and mushrooms, stir for 2-3 minutes.⁠
4. Add sauce and let simmer until veggies are softened.⁠
5. Add your noodles to the pan, mix well, and cook for 1-2 minutes.⁠
5. Sprinkle with some sesame seeds and enjoy!⁠
