This vegan mie noodles recipe makes a perfect quick lunch! Mie Noodles are so easy to cook and they are delicious with almost any veggie.
I think the most important here is the right combination for a flavorful sauce. After a while, I found my perfect combination of ingredients for my mie noodle recipes. I hope you like as much as I do :)

How to make vegan mie noodles with broccoli & mushrooms
Ingredients:
– 250g mie noodles
– 1 broccoli, chopped
– 400 mushrooms, chopped
– 2 cm fresh ginger, grated
– vegetable oil
Sauce:
– 1/2 cup water
– 1 tbsp brown miso paste
– 1 tbsp lemon juice
– 1 veggie broth cube
– 1 tsp tamarind
– 2 tbsp soy sauce
– 1 tsp tapioca starch
– 1/2 tsp chili flakes
– 1-2 tbsp brown sugar
Method:
1. Cook mie noodles as per instructions. Set aside.
2. In a small bowl, mix together all ingredients for your sauce.
3. Heat oil in a pan over medium heat. Add ginger and cook for about 1 minute. Add broccoli and mushrooms, stir for 2-3 minutes.
4. Add sauce and let simmer until veggies are softened.
5. Add your noodles to the pan, mix well, and cook for 1-2 minutes.
5. Sprinkle with some sesame seeds and enjoy!
