For such a long time I didn’t really pay attention to cauliflower. Maybe that was due to the fact, that I didn’t know all the different ways to prepare cauliflower and I wasn’t aware of all the variety of recipes for it. Now cauliflower is regularly on our plates – in many different ways.
Today I would like to introduce roasted cauliflower served with some mashed sweet potato. Not only the bright orange of the mash and the white-greenish color of the cauliflower looks amazing together, it also tastes wonderful.
The cauliflower comes out of the oven full of flavor due to the aromatic parsley mixture. It balances pretty nice with the mashed sweet potato, which I pimped up with a dash of milk and mustard. I really like sweet potato, but sometimes it’s kind of too sweet for me. Adding some mustard really makes the difference and gives a super delicious aroma.

They are also rich in beta-carotene, which is converted to vitamin A and super good for healthy eyes and skin. Sweet Potatos are also a great source of vitamin C, which is supportive for a healthy nerve and immune system.
