For such a long time I didn’t really pay attention to cauliflower. Maybe that was due to the fact, that I didn’t know all the different ways to prepare cauliflower and I wasn’t aware of all the variety of recipes for it.  Now cauliflower is regularly on our plates – in many different ways.

Today I would like to introduce roasted cauliflower served with some mashed sweet potato. Not only the bright orange of the mash and the white-greenish color of the cauliflower looks amazing together, it also tastes wonderful.

The cauliflower comes out of the oven full of flavor due to the aromatic parsley mixture. It balances pretty nice with the mashed sweet potato, which I pimped up with a dash of milk and mustard. I really like sweet potato, but sometimes it’s kind of too sweet for me. Adding some mustard really makes the difference and gives a super delicious  aroma.

Nutritional Facts

Cauliflower: Cauliflower provides you with almost all vitamins you need (C, B, K). In addition cauliflower contains high amount of fiber, which helps to protect the good bacteria in our gut, to reduce inflammation and to support digestive health. Furthermore cauliflower almost has no calories and is therefore very supportive when it comes to weight loss.

Sweet Potato: Sweet Potato contain a high amont of fiber and antioxidants, which aids the digestition and gut health. They are also rich in beta-carotene, which is converted to vitamin A and super good for healthy eyes and skin. Sweet Potatos are also a great source of vitamin C, which is supportive for a healthy nerve and immune system.

Roasted cauliflower with mashed sweet potatoes

Ingredients

For roasted cauliflower:

  • 1 cauliflower
  • 2/3 cup olive oil
  • 1 clove garlic
  • 1 onion
  • 1 handful fresh Parsley ( some extra for garnish)
  • 1/2 tsp Salt
  • Pepper
  • 1 Chili

Mashed Sweet Potato:

  • 3 Sweet Potato
  • 1 tbsp mustard
  • 1 dash of milk

Instructions

  1. Preheat oven to 180°C.
  2. Peel Sweet Potatoes, cut into cubes and cook until soft.
  3. Cut cauliflower into thick slices (about 2 cm) . Make sure each slice contains a part of the root (otherwise it’s falling into little pieces, which is still ok as you can use them the same way. You can put all the tiny pieces, which are too small for baking, into the potato pan to cook and use within mash.)
  4. Put cauliflower slices on a baking tray.
  5. Blend all the ingredients for the dressing (olive oil, garlic, onion, parsley, salt, pepper, chili).
  6. Brush cauliflower slices with half of the dressing.
  7. Bake cauliflower for 15 min. Then turn cauliflower slices, brush other side with remaining dressing and bake for another 15 min.
  8. Mash the soft sweet potatoes. Add mustard and dash of milk. Stir until well combined.
  9. On a plate arrange the mashed sweet potatoes and put a piece of cauliflower on top. Sprinkle with some fresh parsley and enjoy.
