Hungry but not enough time to cook? This creamy but spicy recipe for peanut noodles is done in 15 minutes only.
This easy 15-minute recipe is perfect when you’re in a hurry. You probably have most of the ingredients at home, so it’s also very easy. That’s the great thing about Asian noodle recipes: They’re always quick and easy to prepare. (Also try my Mie Noodle recipe with broccoli & mushrooms)
What ingredients do you need to make the spicy peanut noodles?
- 250g Mie Noodles
- 1 bunch of spring onions (chopped)
- 1-2 tbsp Oil
- 2 cloves garlic (finely minced)
- 1 cm fresh ginger (grated)
- 120 g peanut butter
- 1 tsp chili flakes
- Coriander (optional)
How to make spicy peanut noodles
- Cook Mie Noodles as per instructions.
- Heat oil in a large pan, add ginger, garlic, and chili flakes for 3-4 min.
- Add spring onions, but leave some aside for topping later.
- Stir in peanut butter and simmer for 2-3 minutes.
- Add noodles and mix well.
- Serve with fresh coriander.
