What are German bread dumplings?

German bread dumplings are a traditional dish from the heart of Germany. These dumplings are made from stale bread, giving them a unique texture that is both hearty and filling. They are usually served as a side dish and absorb the flavors of the accompanying sauces. They are traditionally served with meat dishes and sauerkraut. However, the dumplings are also ideal as a vegan side dish.

What do you need to prepare the recipe?

Dumplings

  • 200g toast bread
  • 160 ml plant-based milk (soy milk)
  • 1/2 onion
  • 1 tbsp oil
  • 80g baby spinach (washed, roughly chopped)
  • 1-2 tbsp flour
  • 1 tbsp potato starch
  • 2 tbsp breadcrumbs
  • Salt pepper
  • 1 pinch of nutmeg

Tomato sauce

  • 1/2 onion
  • 1 clove of garlic
  • 1/2 tbsp oil
  • 1 can of peeled and chopped tomatoes
  • 1 bay leaf
  • 1 tsp brown sugar
  • 2 tsp dried oregano
  • Salt pepper

How are the vegan bread dumplings prepared?

Dumplings:

  1. Cut the toast bread into small cubes and place in a bowl.
  2. Mix potato starch with 2-3 tablespoons of milk and prepare.
  3. Heat the remaining milk in a small saucepan and then pour it over the toast. Let it soak for about 5-10 minutes.
  4. Peel the onion and cut it into small cubes. Heat oil in a non-stick pan. Sauté the onion until it is translucent. Add the spinach and let it wilt. Add the spinach and onion mixture to the toast. Pour in the mixed starch. Season with salt, pepper and nutmeg.
  5. Now knead the dough with your hands until it forms an even mass. Wash your hands and, with your hands still wet, shape the dough into 6 small dumplings.
  6. Bring salted water to a boil in a large pot. As soon as the water boils, turn the heat to medium and add the dumplings to the water. Let simmer for 15 minutes.

Tomato Sauce:

  1. In the meantime, prepare tomato sauce. To do this, peel the onion and garlic and cut them into small cubes. Sauté in a little oil until translucent.
  2. Add chopped tomatoes. Now add the sugar, bay leaf, oregano and salt and pepper. Stir everything well and let it simmer for about 10 minutes. Then remove the bay leaf.
  3. As soon as the dumplings are ready, remove them with a slotted spoon and arrange them on two plates with the tomato sauce.

Tips for making vegan bread dumplings

Fry leftover dumplings:

If you make too many dumplings, they are great for frying! Simply store the dumplings in the refrigerator until ready to eat. To fry, cut the bread dumplings into slices. Then heat a pan with a little butter or olive oil over medium heat and fry the dumplings in the pan until they form a golden brown crust. They taste almost better than freshly cooked!

Experiment with types of bread:

Although classic rolls are particularly suitable for bread dumplings, you can also try the recipe with other types of bread. Multigrain bread, for example, provides more consistency and taste. However, make sure that it is stale bread to achieve the ideal dumpling consistency.

Use fresh herbs for a great taste:

You can also add fresh herbs to the dough mixture instead of (or in addition to) spinach. Chopped parsley, thyme or chives add a touch of freshness and go great with the dumpling dough.

Check the consistency of the dough:

Depending on which bread you use, the dough will be firmer or more liquid. If the mixture seems too dry, add a splash of milk. If it is too wet, add a little more flour. The right balance ensures that the dumplings retain their shape while cooking.

Serve with different sauces:

While tomato sauce is a classic side dish, you can also try other sauces. Creamy mushroom sauce, spicy pesto or even a spicy roasted pepper sauce taste great with the vegan bread dumplings.

Batch Cooking and Freezing:

To save yourself some time on stressful days, you can also make a larger batch of dumplings and freeze them for later.

To do this, prepare the bread dumplings as described in the recipe and once they have cooled, freeze them. To defrost, you can put them in a pot of hot water. As soon as they float to the top they are thawed.

How should you store leftover dumplings?

If you have leftover dumplings, you can store them in an airtight container in the refrigerator for up to three days. To reheat, gently steam, heat in the microwave or fry in slices (super tasty!).
