This Borek is a very traditional recipe from Turkey, which I prepared in a vegan way. This recipe very easy and super delicious. It’s one of those meals, which is just perfect when you have guest staying at your place and you are not really sure, when they gonna arrive. As you can eat Borek fresh from the oven or as a cold dish, you are super flexible with the preparation. You can even prepare the Borek, put it into the fridge and bake in the oven at a later point. It’s also a good meal for Parties as it makes a great contribution to a buffet.

I know exactly when I ate Turkish Borek for the first time. It was while studying and I had this friend, whose boyfriends had some turkish roots. On our regular cooking evenings (at those times we used to watch “Germany’s Next Topmodel” combined with some homemade dishes). So one night we wanted to try some Borek, which we prepared under the instructions of my friends. Well, on those days we used to cook Borek with minced meat and real milk, but I can remember that is used to be super delicious.
Now, years later, I thought it’s a great idea to do a “remake” of Borek as a vegan version. Of course I gave up meat and any other animal products. Instead I combined the typical spinach flavour with a sweet nuance of sweet potato. You can also add some feta cheese if you like. This turkish dish goes very well with a fresh salad, some aubergine and hummus.



For spices I used Za’atar, which is an arabic spice mixture made of roasted sesame, cumin, sumach, marjoram, oregano and salt. It has a very nice flavor and goes also very well with salads or other arabic dishes.
* I used a baking dish with the size of L=30cm x W=23cm x D=6cm.
