Vanilla overnight oats with roasted almonds. The perfect winter breakfast recipe made with creamy rolled oats and crunchy toasted almonds.
What ingredients do you need for the vanilla overnight oats with roasted almonds?
Vanilla Overnight Oats:
- 100g rolled oats
- 250 ml vanilla milk (vegan)
Yoghurt Layer:
- 3-4 tbsp natural yoghurt
- 1 tsp cocoa powder
- 1 tsp almond butter
Roasted Almonds:
- 1 handful of almonds
- 1 tbsp maple syrup
- A pinch of cinnamon

This is how you prepare the vanilla overnight oats
- Mix all the ingredients for the overnight oats (if you prefer your oats a little creamier, I recommend that you mix the ingredients very finely with a blender) and pour them into one or two glasses. Let them soak in the fridge overnight.
- To prepare the oats for breakfast, heat a non-stick pan and toast the almonds. When they get brown, add the cinnamon and maple syrup. Mix everything well and make sure that the almonds are covered with the maple syrup on all sides. Put the almonds on parchment paper and let them cool completely.
- Mix the cocoa cream: Mix together the natural yoghurt, cocoa powder and almond butter.
- Put the cocoa cream on top of the vanilla oats and serve with the roasted almonds.
