Croissants are great. Especially fresh from the oven and when the delicious scent permeates the whole apartment. Add a cup of coffee and the day is pretty much perfect. These vegan almond croissants have been quite popular lately for us and they are my definition of a perfect Sunday afternoon.

I could go on and on with the list. Croissants are great, whether sweet or savory, warm or cold, for breakfast or with coffee.

I discovered my love for almond croissants in Auckland. There are almond croissants in every café and they taste incredibly delicious everywhere. While I used to know croissants plain or with chocolate, the combination of creamy, intense almond cream and crispy puff pastry won me over with the first bite. But no worries, you don’t have to travel to Auckland to enjoy a delicious almond croissant. With fresh puff pastry from the supermarket, the delicacy can be also home. Easy Peasy.

What Ingredients Do you Need For Almond Croissants?

  • 1 puff pastry (fresh)
  • 100g ground almonds
  • 4 tbsp powdered sugar
  • 2 tbsp vegan butter
  • 2 tbsp lemon juice
  • 2 teaspoons vanilla extract
  • 1 pinch of salt

For brushing:

  • 1 teaspoon soy milk
  • 1 teaspoon agave syrup
  • A few flaked almonds to sprinkle.

How to Make Almond Croissants?

  1. Preheat the oven (180 ° C convection). Line a baking sheet with parchment paper.
  2. For the almond filling, mix the ground almonds, powdered sugar, butter, lemon juice, vanilla, and salt to a firm cream.
  3. Cut the puff pastry into 6 oblong triangles. (It’s best to use a pizza cutter.)
  4. Spread the almond cream on the puff pastry and roll it up into croissants.
  5. Mix the soy milk and agave syrup.
  6. Brush each croissant with the agave milk and sprinkle with flaked almonds.
  7. Bake in the oven for 15–20 minutes until golden.
  8. Allow to cool and dust with powdered sugar (if necessary).
