Eating and cooking plant-based is very exciting to me and makes me feel good every single day. I love to cook with all the fresh ingredients and the variety of veggies and fruits you use on a daily basis in your kitchen. Since I’ve started to cook vegan recipes, I got introduces to so many new recipes and new ways of cooking. I rarely miss any animal products. The only exception is cheese. I love cheese and always will. That’s why I am super curious to find and create recipes for vegan cheese alternatives. 

Lately, I’ve been working on a recipe for vegan feta cheese and this result here really got me. The homemade feta cheese based on tofu is full of flavor and perfect as a snack. Enjoy the feta cheese with bread, salads, and many other recipes.

Ingredients

  • 200g firm tofu
  • 1/2 tsp garlic powder
  • zest of 1/2 lemon
  • juice of 1/2 lemon
  • 2 tsp salt
  • 1/2 tsp dill (dried)
  • 1/2 tsp oregano (dried)
  • 1/2 tsp marjoram (dried)
  • 1 tsp thyme
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar

Instructions

  1. Drain tofu and cut into little cubes.
  2. Fill tofu cubes together with other ingredients in a sealable glass/container and place in refrigerator overnight (or for at least 6-8 hours). The longer the tofu sits in the mixture, the tastier the feta will be.
  3. The vegan feta cheese will last in the fridge about 5 days if the tofu is kept in the liquid.
