Zupfkuchen is a true classic among German cake recipes. Who doesn’t love the combination of creamy cheesecake and chocolate sprinkles?

Simple Zupfkuchen Recipe

The vegan cake is very easy to prepare because the cake consists of only 2 components: chocolate crumble dough and a creamy vanilla filling. Also, you don’t need many ingredients to bake the cake. You probably have most of the ingredients at home.

For the vegan version of the cake, I use “Alpro Skyr Natur”* for the vanilla filling. You can use any kind of soy quark here. If you don’t have any vegan quark, you can alternatively use silk tofu. This should be finely pureed so that it is creamy.

This is how you prepare the Russian Zupfkuchen

  1. Preheat the oven and grease your baking pan.
  2. Put all the ingredients for the dough in a large bowl. Knead the dough into a homogeneous mass. Press the generous half of the dough evenly into the springform pan, forming a rim. Set the rest of the dough aside for later.
  3. Put all the ingredients for the filling in a bowl and mix with a hand mixer until smooth. Pour the filling onto the dough.
  4. Now spread the rest of the dough over the filling and sprinkle over it like crumbles.
  5. Bake the pound cake for about 35 minutes.
  6. Leave to cool in the mold. I recommend serving the tart with fresh berries.

Ingredients

Dough

  • 150g flour
  • 60g sugar
  • 80g margarine
  • 25g cocoa powder
  • 1/2 packet baking powder
  • 1 sip of soy milk (or other plant-based milk)

Filling

  • 400g vegan quark (or Alpro Skyr Natur*)
  • 1 packet of vanilla pudding powder
  • 50g sugar
  • 100g margarine

Instructions

  1. Preheat the oven to 180ºC (convection).
  2. Grease and flour an 18 cm baking pan.
  3. Put all the ingredients for the dough in a large bowl. Knead the dough into a homogeneous mass. Press the generous half of the dough evenly into the springform pan, forming a rim. Set the rest of the dough aside for later.
  4. Put all the ingredients for the filling in a bowl and mix until smooth. Pour the filling onto the dough.
  5. Now spread the rest of the dough over the filling and sprinkle over it like crumbles.
  6. Bake the pound cake for about 35 minutes.
  7. Leave to cool in the mold. I recommend serving the cake with fresh berries.
