Warm, Vegan Chocolate Cake with Cherries

To sweeten the first cold winter days a little, I needed a moist, warm, vegan chocolate cake last weekend. The result is this little chocolate cake with cherries and the flavor of Christmas.

I’m honest with you. When it gets colder and darker outside, I just wanna falls into hibernation waiting for the spring awakening with birds chirping, temperatures increasing and corona travel restrictions disappearing.

But since we are quite far from this ideal state, we have to come to terms with the situation and make the best of it. For me, that means: Enjoying warm chocolate cake, drinking tea, and defying the cold with a thick blanket.

So actually I can endure it quite well. 🙂

Recipe for a warm, vegan chocolate cake with cherries
(ø 18 cm)

You don’t need a lot of ingredients for this cake and it is really easy to make. As the name suggests, the cake is particularly tasty when warm. But it’s also a real treat when cold.

I baked the cake in a small springform (ø 18 cm). For a full-size springform pan, you can simply use double the amount of ingredients.

Ingredients:

  • 125 g flour
  • 125 g butter (vegan)
  • 125 g brown sugar
  • 2 chia eggs (2 tbsp chia seeds soaked in 6 tbsp warm water)
  • 1 teaspoon Baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon gingerbread spice
  • 1 tbsp cocoa powder
  • 1/16 liter of cherry juice
  • 200 sour cherries
  • 50g chocolate sprinkles

Chocolate Coating:

  • 50g dark chocolate (vegan)
  • 1 tbsp almond flakes

Preparing your Chocolate Cake

To prepare the cake, simply mix all the ingredients together. I always stir in the chocolate sprinkles and cherries at the end.

Now you can put the dough in a greased form and bake it in a preheated oven at 175ºC for about 45-50 minutes.

It’s best to do a “toothpick test” to see if the cake is done. Simply stick a toothpick into the middle of the cake and if it comes out clean, the cake is done. 

A little tip: During the last 5-10 minutes of baking time, I always put a fireproof cup with the vegan chocolate in the oven to melt it. So I save myself the water bath. As soon as the cake is baked, spread the chocolate and decorate with almond slivers.

  • 125 g brown sugar
  • 2 chia eggs (2 tbsp chia seeds soaked in 6 tbsp warm water)
  • 1 teaspoon Baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon gingerbread spice
  • 1 tbsp cocoa powder
  • 1/16 liter of cherry juice

Instructions

  1. Preheat the oven to 175ºC (forced air).
  2. Mix flour, margarine, sugar, chia eggs, baking powder, cinnamon, gingerbread spice, cocoa powder, cherry juice.
  3. Stir in the chocolate sprinkles and cherries.
  4. Put the dough in a springform pan (ø 18 cm).
  5. Bake the cake for 45-50 minutes.
  6. Cover the cake with the melted chocolate and sprinkle a few almond flakes on top.
